Trout Treat #1

Grilled Trout with Herb Butter

4 – 8 small trout (one pound or less)
½ cup butter softened
Juice of one lemon
6 green onions, or yellow onions sliced thin
2 T parsley chopped
½ t basil
½ t chervil
¼ t cayenne
dash tarragon
salt and pepper

If you have a hinged basket, grease and place it 4" above the heat. Salt and pepper the trout cavity, and stuff with onions. Mix other ingredients and brush both sides of trout. Grill, turning and basting every two minutes, for a total of 10 – 12 minutes. When done, fish flakes easily and the flesh is opaque. Almost any herb will work with trout. Enjoy!
